To the question “What’s your blog going to be about?” Ans. I don’t know in particular, but as I am inspired, I will write. Its all about the Beautiful Life.
Today we would be talking about transforming those leftovers in our fridges and freezers to healthy meals. Every Mama at one point or the other has a bunch of leftovers in the fridge or freezer. What do you do with them when you get tired of accommodating them? Do you send them packing or you remodel them? I for one hate leftovers but now that I am a mom, I have come to learn to appreciate them because many a times they are life savers especially when that hungry child or spouse comes snooping in the kitchen for something to throw in their mouths.
On Tuesday I posted a picture of a transformed leftover I made for Bambie and I. Its on my Instagram page, feel free to follow me there. Today I would be sharing how I made Egusi Soup from a leftover stew in my freezer.
Egusi Soup is not a regular in my home. But as much as my boyfriend is 100% in on this healthy meal journey, there are times, we have to bring in the typical “Yoruba” dishes and make sure they are healthy.
INGREDIENTS
1 small red onions
1½ cup Grounded Egusi
½ cup frozen Ugu
1 tablespoon Parsley
Leftover Snail and Gizzard stew
Oven baked Chicken Drumsticks (your desired number, I used 5pieces)
Smoked Cat Fish
Water
DIRECTIONS
Clean and soak smoked fish in water for 30 minutes. Once soft enough, shred to desired sizes.
Chop onions to a fine consistency and add to grounded egusi. Add water and mix all together to have a paste-like consistency.
Chop Ugu and Parsley and set aside for use later. Ensure you have baked your chicken and then set aside for use later too.
In a pot, put in leftover stew without snails and gizzard and add 4 cups of water and smoked fish. Allow this to boil for 15 mins. Scoop in egusi paste, one teaspoon size at a time till all has been put into the boiling sauce. Cover and allow simmer for 15 mins on low-medium heat.
Add snails, gizzard and drumsticks. Add salt to taste if needed and stir to mix all in. (If the egusi balls are too big, use your wooden spoon to break them down in the pot before adding the proteins.) Cover and allow protein to take in all the flavor of the soup over low heat for 10mins.
Add Ugu and Parsley, stir and remove from heat.
Serve and enjoy alone or with a side of swallow of choice. We had ours with Poundo-Yam.
This will make a very good lunch or dinner. Enjoy.
No Palm oil was used in preparation and no seasoning cube of any sort was used. I don’t cook my meals with seasoning cubes. I used healthy spices, fresh and dried herbs and salt only.

Its Thursday and like I said, I would be sharing my healthy food journey with you and I hope and pray you find it so helpful as you and your family begin this beautiful journey. Okay now that Bambie is officially a toddler, we have grown “food wise”. From the onset, it was my utmost desire to always have my family especially my children eat healthy meals and I love preparing them with so much love.
Just like I mentioned, I cook as inspired and I create my own recipes.
Today I bring to you a dish I call “Bambie’s Bell Peppers and Gizzard” and it is happily paired with Coconut rice and a side of undressed 2-ingredient salad.
INGREDIENTS
2 medium Red bell peppers
1 medium Green peppers
1 medium Yellow peppers
2 medium tomatoes
1 medium Red onions
1 cup gizzard (cooked)
1 cup green peas
0.5 cup diced carrots
3 tablespoons coconut oil
1.5 cups of rice
1 cup coconut milk
1 handful of Red cabbage
1/2 a medium cucumber
DIRECTIONS
Slice Onions, Peppers and Tomatoes.
Heat oil in a skillet and fry onions till translucent. Add peppers and allow fry for 5 minutes then add tomatoes and allow fry till water is absorbed.
Add spices of choice. (I added Garlic powder, ginger powder and salt)
Add Peas, Carrots and Gizzard. Stir and allow simmer for 5-10 minutes and turn of heat.
For Rice, Put washed rice, coconut milk, salt and a handful of diced onions in a pot and cook till done. (I start on high heat. Once boiling, I turn heat to low and allow to cook till soft)
For Salad, Red Cabbage and Cucumber.
Serve as desired. Remember more vegetables.
This will make a very good lunch or dinner. Enjoy.

Wow the weekend is already upon us. How was your week? Trust you all had a beautiful week?
For me it was all mixed up. Being a full time “Mom-preneur”, it has been a busy one. A mighty shout out to all moms out there who work from home. Especially when you have a toddler. But really, how do you guys do it? Well let’s get back to the post of today.
How many of you know that healthy eating and healthy living was one of God’s plan for man? Well, just before you nod your head in approval or do that face in disapproval, let me take you back to the Manual – BIBLE. Genesis 1: 11-13 (The Message) : God spoke: “Earth, green up! Grow all varieties of seed-bearing plants, Every sort of fruit-bearing tree.” And there it was. Earth produced green seed-bearing plants, all varieties, And fruit-bearing trees of all sorts. God saw that it was good. It was evening, it was morning—Day Three. Verse 29-31 (The Message) : Then God said, “I’ve given you every sort of seed-bearing plant on Earth and every kind of fruit-bearing tree, given them to you for food. To all animals and all birds, everything that moves and breathes, I give whatever grows out of the ground for food.” And there it was. God looked over everything he had made; it was so good, so very good! It was evening, it was morning—Day Six.
Now, have I been able to convince you? As you can see, I didn’t say it. Okay then now that you are a little convinced, let’s look forward to positive changes right?
When I learn’t how to cook back in University, I was determined to always be creative especially in the kitchen. Thank God for my growing family because one of my fear was having my boyfriend (in case you are new here, I am talking about my husband) been rigid but God bless his beautiful soul because we both came into this union ready to stay healthy, eat healthy and live healthy. When our little one arrived, it was not so hard to ensure she tagged along on this journey.
When it comes to food, I am very particular of it’s look and taste. I read a friend’s Facebook post which said and I paraphrase that “so far the food had all the nutrients in it, the taste and the looks didn’t matter.” For me, it matters a whole lot and I will gladly tell you that it should matter to you as well. Genesis 2: 8-9a (The message) : Then God planted a garden in Eden, in the east. He put the Man he had just made in it. God made all kinds of trees grow from the ground, trees beautiful to look at and good to eat.
Now you see it. Especially in homes where you have little ones, your meals should be so attractive to them that they would be running after you when they see you holding a plate and guess what, children love colors and are easily attracted.
Do you have a family that has clung to junk food and it seems you can’t help it?
Do you have children who are not foodies?
Do you have a spouse who is living unhealthy?
Do you want a healthy you and family?
Then you are at the right place. Let us make us some healthy family. I will be sharing meal inspiration that are rustic. As much as I am working on been keen on presentation, I ensure that they are simple and easy to make. Let me tell you this now, I am terrible on a diet so this is not about dieting. It’s about healthy options and healthy alternatives.

I always hear people talk about how God told them to do this and that. Some even say, they were led of God to do this and that. Then I begin to wonder if it’s the same God that I talk about that they are referring to.
Happy Sunday my beautiful people and as always let us talk about this issue that has seemed to define so many of us and how we behave.
Is God two faced? Okay I have read only about God been a loving Father and also a consuming fire. These attributes I understand to be that God will do anything for us to enjoy his love and also is not afraid to whip us when we do the wrong. Just like every parent who wants nothing but the absolute best for their children, God also want nothing short of his best for everyone of us.
You may ask me, “If you know so, then why do you ask?”. Well, I keep wondering if God is two faced because sometimes the way we behave as Christians (young Christ), we tend to tell the world that He is. For example, I wonder why God will tell you to tell us something in order to stir up a fight when He told us to follow peace with all men and even went on to tell us that as much as we can, we should ensure we live in peaceful co-existence with others. Why will God tell you to dislike someone who isn’t in your own definition of “godly circle” by reason of their denomination or whatever your reasons are and tell you to love only those who think or reason like you (not unbelievers in this case). These are some of the many examples we are surrounded by.
Dear Beauties (male and female), one thing I know is that God is many things to everyone. In fact, He sees everything everywhere every time but one thing he is not is “two-faced”. He wears no mask, He is the same God of our fathers and the God we serve and the one our children will grow up to know intimately. I want to encourage you to understand that the ONE we so powerfully talk about and say we follow is not two faced. God is GOD, Loving not Hating. He wants us to emulate him in loving unconditionally. Let us be one who speaks good of others and will rather be closed (silent) if all that will come through those windows (lips) is the air of lies, deceit, gossip and all things labelled bad and ugly.
Let our words, actions and even the way we live show who HE truly is. Let us not be a source of confusion to the little world around us. Let someone hear you, look at you, come in contact with you and call you an Angel. Let them be quick to say without a doubt that you are truly living the beautiful Life. Let them see through you that GOD is not two-faced.
Finally remember that God’s word is sharper that any sword with two edges. It cuts through deeply such that it can cause your spirit to bleed because He sees your innermost intents and attitude that we may not see on the outside. So when you send your spirit man to battle the word of God, know that you will get hit very deeply.

“Hello Sisi. How are you? What has been happening to you? Which school are in now?” Kiki asked. “Hello. I am fine. Nothing much. I am in University of Lagos now” replied Sisi. “Oh, I am so happy for you. Thank God our dreams are coming to pass.” Kiki sent back as they chatted through the Facebook messenger. “Thank God. Let me quickly prepare for my lecture so that I don’t get late,” Sisi wrote. “Okay friend. Do have a nice day,” replied Kiki. “And you too.” came the response from the other end of the computer.
Sisi and Kiki were acquaintances by virtue of living in the same area. As young people with dreams and aspirations for the future, they desired that they would each get admissions to their universities of choice but things didn’t turn out to be exactly as they dreamed. Kiki got admission immediately after School and went on to study the course of her choice. Sisi later graduated and unlike Kiki, didn’t get admission immediately. Feeling left out and not wanting Kiki to know what was happening, she began to tell outsiders and even Kiki that she had gotten admission. Above was the conversation that they had.
…Based on a real life story but names have been changed.
Usually my afternoon naps are between 1:30mins to 2hrs. On this faithful day before my nap, what to share had been on my mind. As I drifted off to sleep, I found myself sitting on the toilet bowl in our bathroom (I’m sorry, that’s where I get inspired the most) and the next thing that came so clearly and profoundly was, “Are you walking by faith or living a lie.” Waking up just in time, it was as though I never slept at all and then it clicked within that the only time I had ever spoken of such was to my siblings whenever we have the moment of hard truth being shared among us.

Faith can be defined as “complete trust or confidence in someone or something.” It can be said to be “a strong belief in the doctrines of a religion, based on spiritual conviction rather than proof.” Living a lie on the other hand can be defined as “living in a way that is dishonest because you are pretending to be something that you are not, to yourself or to other people.“
It is so easy to always live a lie and term it walking by faith. When Sisi was later discovered to be lying all along, one thing she said was that she was doing so by faith. When you are walking by faith, the intent of your heart and your actions matter. You work towards ensuring that you truly believe what you believe. For example if you have faith in me to give you something, you will come to me and ask without any form of doubt. But if you don’t ask me and keep believing I can help you, you will never receive the help you desire because I do not know exactly what your needs are or what I feel may be your need could turn out not to be exactly what you need at that time.
Living a lie on the other hand does not make any effort neither is there any form of belief. When you live a lie either because you cannot come down from your high horse or because you don’t want to feel vulnerable, you loose out on all the things that could easily be yours. Take Sisi for example, if only she had mentioned to Kiki that she had not gotten that admission, she wouldn’t have ended up staying at home longer and then everyone finding out that she wasn’t what she said she was.
Faith has only one thing at the end of the day – to make you a testimony and make you happy. Living a lie on the other hand only brings about embarrassment, disgrace and hurt to you and others.
So dear friend, are you walking by faith or are you living a lie?
One thing I have come to know and share with others is this. “You can lie to everyone but you cannot lie to Yourself, God and the devil. We can easily believe what you tell us and act based on that but the truth will only be with you and your maker. Living a lie robs you of the beautiful things of life, I must tell you. It only makes you a slave to yourself. Do not let the blessings of others put you in a position to live a lie. Rather, let it propel you to believe in God and those God has directed you to look up to.
When people place you on a high pedestal and accord you some high level of respect because they believe in you, one thing you should do is ask God to help you not to fail them. Don’t let it get to you and then you loose you true identity and become a lie because at the end of the day, you get to choose which road you go through.

It’s a happy and beautiful new year to everyone from Beautiful Life Articles. Wow, three months already gone in the year 2017 and we are forever indebted to God with our gratitude because we are alive by His grace and mercy.
At the start of the year, I struggled so much because I wanted to write and share with you all but I was greatly restricted. My hands itched and itched, I just wanted to share new lessons, new stories, new findings, new recipes and new things in general but what is Beautiful Life Articles without God? NOTHING!!
Saturday was another beautiful day and I had started writing only to be stopped along the way. Well I didn’t get back to write and later that day, I sat with Bambie and we watched an episode of the program “LITTLE BIG SHOTS” anchored by Steve Harvey. There was this 7 year old who came on the show. He was blind and he is a singer. While they discussed before his performance, one of the things he said was, “Mr Steve Harvey, I love you.” As Mr Steve reached out to hug him, he embraced Mr Steve so warmly that I didn’t know when the tears flowed through as I watched. Then fast forward to where he was singing. Oh the beautiful voice and I was touched by the beauty that came through from this amazing 7 year old.
As I sat there and kept rewinding, this was impressed in my heart. How many of us are perfect physically and have everything that we want going well for us but lack the true beauty? So many of us say we love the Lord yet, we cannot even show at least 10% of his beauty. I was lead to ask the Lord to forgive me where I had taken things for granted and I asked that He helps me live in and show his beauty to everyone around.
The Rose is termed the most beautiful flower in the world and I am forced to agree because many a times the rose is what is being given out to loved ones. Nobody gives out a bunch of weeds to anyone. As you read this, I want to ask you and I two soul searching questions:
Are we a rose which can be given out to others and our presence puts a smile on their faces?
Are we a weed that cannot be given out but instead gathered up and burned or thrashed?
The good news is that here we share all you need to know to become a rose. Join us and invite others to join in on this beautiful journey to discovering and living in the absolute beauty of Christ. At Creation, we were all made beautiful (in the image of God), the fall of man put a dent on this beauty but the presence of Jesus removes the dent and makes us BEAUTIFUL. Just as we were originally designed.
Welcome on board and let the beauty of Christ be seen in you all.

Usually, people set goals or wait to have a new year resolution. For me, I have goals prepared for the next year some days before it arrives. To this end, I invite and encourage you all to set realistic and even unbelievable goals for 2017. By the time this post is published you have 3 days to do that. They do not have to be in any order. Just make a list of all of them and tick them off when achieved. Always check to see how much you have achieved so you know how to go about what and what remains.
I have divided mine into Five major categories which I always check quarterly to tick off those that are done and those that remain. I use my “note” application on my phone. Work with what feels comfortable for you.

Family/Home Goals
Financial Goals
Interpersonal Relationship Goals
Just like a footballer keeps moving forward towards the goal post to earn a point by sending the ball right into the net. Let us all be encouraged to move forward into the new year ensuring we earn every point from that goal.

Finally as we all begin the new year, let’s remember that we get ALL THINGS when we seek God kingdom and live righteously FIRST. No matter how impossible your goals may seem to even you. Claim the promises of God in Matthew 19:26 (ERV) “Jesus looked at them and said, “This is something that people cannot do. But God can do anything.””
